Bikini Recipe

Serves 10 people

For the Clementine Cordial (yields 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

Ingredients for the Cocktail (yields 850ml, serving 10)

400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing

Method

Making the Citrus Syrup: Put every components into a pot, bring to a simmer, stirring so the sugar melts. Then, take off the heat and leave to reach room temperature completely. Decant into a sterilised bottle, seal and refrigerate it chilled, where it will keep for up to a month.

To make Batch Mix: Combine all the liquids into one large bottle, let it rest for an hour, then strain best through a fine cloth, so it's perfectly clear.

For serving: Measure 85ml of your premix into your cocktail shaker packed with ice, gently stirring lightly for a minute until cold. Strain to a chilled martini glass or similar, top with the cranberries and complete it using a quick spritz of mandarin oil above the glass.
